Banana Split Cake

wfmwbannerkristenWe are THAT Family is hosting a special Summer Recipe Edition of Works for Me Wednesday, so I thought I would share one of my favorite summer desserts. I almost said my favorite, but I don’t know that I can say I have one favorite recipe. This one would be at the top of my list, though.

This layered cake is guaranteed to be a hit whenever you make it. It’s my first choice to take to summer potlucks and get-togethers.

And it’s super-easy to make…..no cooking required in your hot kitchen!

1st Layer:
2 C. graham cracker crumbs or vanilla wafers (I usually use graham cracker crumbs)
1 stick margarine
1/2 C. powdered sugar

Mix cookie crumbs and melted margarine, or graham cracker crumbs, margarine, and sugar.

Press into 9 x 13 inch pan for crust.

2nd Layer:
2 C. powdered sugar
2 egg whites
1 stick margarine

Beat sugar, egg whites, and margarine together for 10 minutes and pour over first layer.

3rd Layer:
4-5 bananas
1 large can crushed pineapple–drained
1 large container Cool Whip
Chopped walnuts
Cherries (completely optional–I don’t use them)

Slice bananas over top of 2nd layer of cake.

Spread pineapple over bananas and Cool Whip over all.

Top with nuts and cherries.

Refrigerate.

I promise it will not take long for this dessert to disappear and if it stays around past the first serving, you’ll be sneaking into the kitchen to sneak spoonfulls out of the pan. Or is it just me that does that??
