Well last week was the first in a long time the I followed my menu plan so well that I didn’t have any meals carry over into this week. It’s a small success that I am celebrating today.
Keith is going to do a retreat at the Edelweiss Resort this week. While he’ll only be gone for a couple of days, it made menu planning a bit more challenging. I just couldn’t figure out what “easy” meals I wanted to make for the kids and I. How did I ever do it for fourteen months? It’s funny how things change in such a short time.
Anyway, I think I came up with a good plan for the week. I have links to a couple of the recipes I found online and the recipe to a favorite.
Monday – Pizza for lunch (it’s my b-day!) and off to a coffee at night
Tuesday – Cheeseburger Macaroni
1 lb. ground beef
2 3/4 c. water
1/3 c. ketchup
1 to 2 tsp. onion powder
2 c. elbow macaroni, uncooked
3/4 lb (12 oz) velveeta cheese, cut up
Brown meat in large skillet; drain.
Stir in water, ketchup and onion powder. Bring to boil. Stir in macaroni. Reduce heat to medium-low; cover. Simmer 8 to 10 minutes or until macaroni is tender.
Add process cheese spread; stir until melted.
Wednesday – Chicken and Fried Rice
Thursday – Easy and Creamy Italian Skillet Dinner
Friday – Shoyu Chicken
Saturday – leftovers
Sunday – Brunch
