Strawberry Cheesecake French Toast

by Monica on December 17, 2008

We’re having this for dinner tonight!

Breakfast for dinner is one of my favorite things to cook and this has become my most favorite recipe for it, especially when we invite friends over. I always get asked for the recipe!!

3 oz. pkg cream cheese
2 T. powdered sugar
2 T. strawberry preserves
8 slices country white bread
2 eggs
1/2 c. half-and-half
2 T. sugar
4 T. butter, divided

Combine cream cheese and powdered sugar in a small bowl; mix well.

Stir in preserves.

Spread cream cheese mixture equally over 4 slices of bread; top with remaining slices to form sandwiches.

Wisk eggs, half-and-half and sugar together in a medium bowl; set aside.

Melt 2 tablespons butter in a large skillet over medium heat.

Dip each sandwich into egg mixture, completely covering both sides.

Cook 2 sandwiches at a time for one to 2 minutes per side, or until golden. Melt remining butter and cook remaining sandwiches as intrructed above.

Slice diagonally and serve. Serves 4.

I like to top mine with extra powdered sugar or whipped topping, and fruit if I have it on hand.

YUMMM!!! I promise this is such a good recipe. I have been craving it for days and my mouth is watering just thinking about having it tonight!

Yeah, it definitely works for me! To see what works for other moms, visit Works for Me Wednesday at Rocks in My Dryer.

Wow, what neat twist on French toast. Sounds like a great Christmas dish, with the red preserves!
